The inspiration for Bleu de Thuy (Blue Water) evolved through the international experiences of the hospitality expatriate that has taken him around the world.

Influenced by the great chefs of today combined with techniques from the master chefs of yesteryear; coming to Vietnam can only be described as a chefs oasis of herbs, spices and flavours that are waiting to be discovered. We want you to experience cuisine in a new form that is not too abstract from daily life but gives you the opportunity to try something new.
It doesnt just end there though as we want make sure there is something for everyone. A menu which crosses all boundaries from polenta crusted grilled salmon with tomato chutney on a Vietnamese herb sauce to something from our grill section; sometimes though there might be a little too much choice. The diverse menu offers both Innovative and Traditional styles of cuisine. Using preparations of Vietnamese and International ingredients the menu enables you to surprise your palate or enjoy something closer to home.
In addition we also prepare a Degustation (tasting) menu for those that want the ultimate culinary journey. As a dining destination there is always something to discover at Bleu de Thuy.
